Eggnog Cupcakes

I have been so excited to make Eggnog Cupcakes ever since I heard about them here at Renolds Wrap's Cupcake Central. However, after trying that recipe I found the batter entirely too thick. Now I could have measure more than the called for amount of flour, but I'm not sure.

So instead I made my own recipe. They turned out soooooo yummy.

Ingrediants:

Betty Crocker Moist Deluxe White Cake Mix
3/4 cup eggnog (I used light)
1/4 cup rum or bourbon (I used a mini of Maker's)
1/4 cup water
3 egg whites
1/3 cup veg oil

Directions: Mix all ingredients and Bake as directed.
Frosting: I used Betty Crocker vanilla frosting in the piping can (looks like cheeze wiz can lol) and grated fresh nutmeg on top.




Sorry for the pic - I barely remembered to take one on my way out the door to bring these babies to spread some cheer at work!
